Oh, I get it ... it's a BIG park. I've been there about .. 18 times? And I still haven't seen it all. Eureka Valley contains the most amazing dunes in the entire park (my opinion). Certainly the tallest, and I'm betting the most extensive? There are some endemic plants and such, and it's a GREAT set...

I don't know who own the cattle, but I believe it's a 'Grandfathered in' sort of arrangement. I remember being stunned myself to find cattle in Death Valley the first time I went up and over Hunter Mountain!

I now travel to DV from AZ, and I have stayed at Tecopa Hot Springs Resort, since it is 'East side'. Affordable prices, very friendly folks running the place. Is this the (former) cabin by Last Chance Spring, or a different one? Precisely that one; yes. It's a nice high (==cool) spot, and the few times I've stayed in the former cabin, I'd meant to hike up Last Chance Mountain from the cabin site, but I never did. I haven't been up that a ways from Cranks...
